The old timers there view it as a trash fish

The folks there to eat fish, go for the speckled trout.

When they idea of redfish on the half shell got so popular is when the big boom happened.

They take a filet, leave the scales and skin on and put butter and Cajun season on the meat. Then cook on the grill scales down and pick the meat out when you at it. That skin and huge scales keeps all the moisture in the meat.
